Lemon or Lime Drizzle Cake

500g Loaf Tin
100g Soft butter
2 Limes or 2 Lemons (not waxed)
2 medium/large Eggs
2 Tablsp. Milk
125g SR Flour
1 flat tsp. Baking Powder
100g Caster Sugar
50g Granulated Sugar
Method:
- Heat Oven to 170c, 150c Fan or Gas 3
- Grease loaf tin + line bottom & sides (short side) with greaseproof paper. Make sure it extends over ends to lift
- Finely grate Lemons/Limes zest & squeeze juice
- Beat eggs & milk together in a small bowl
- Sift flour & baking powder into a large bowl
- Stir in castor sugar
- Cut butter into small pieces & add to bowl
- Add egg mix & zest. Beat with electric whisk until smooth (about 1 minute) Should have dropping consistency
- Pour into prepared tin, bake for 30 – 40 mins.
10.Leave to cool in tin for 5 mins. then turn onto rack
11.Put granulated sugar into bowl, add lemon/lime juice, stir to make runny syrup
12.Return cake to tin while slightly warm, pour over syrup (you can put holes in cake with skewer to get syrup inside cake)
13.When completely cool remove & slice
(As a variation you can also add dessicated coconut soaked in a little milk to mix)
